Chicken and Potato Dumplings

Ingredients (2 Servings)
  

  • 10 ozw chicken breast, raw, sliced
  • 6 ozw gnocchi
  • 4 cups creamy chicken pot pie filling
  • 6 ozw green beans

Instructions

  • Wash and dry green beans. Trim the ends if preferred.
  • Heat a drizzle of oil in a large pot over medium-high heat. Add sliced chicken breast and cook, stirring occasionally until the chicken is browned and cooked through, about 4-6 minutes. Add a pinch of salt & pepper. Add prepared creamy chicken pot pie filling and reduce heat to medium-low. Bring to a simmer, making sure to stir occasionally to avoid burning.
  • Heat a drizzle of oil in a large sauté pan over medium-high heat. Add gnocchi and (1T) 2T margarine along with a pinch of salt & pepper. Sauté until the gnocchi is browned on all sides, 3-5 minutes. Add to the simmering chicken pot pie filling.
  • In medium sauté pan over high heat, bring (¾C) 1C water to a boil. Add green beans and cover with a lid. Steam until beans are tender, about 3-4 minutes. Drain excess water and season with a pinch of salt & pepper and a dab of margarine.
  • Divide chicken and potato dumplings between plates or bowls and serve with green beans. Serve & enjoy!

Tips & Tricks:
Our creamy chicken pot pie filling can be used to make a traditional pot pie. Just pop it into your favorite dough (in a pie pan or casserole dish) add a top layer of dough, bake, and enjoy! (Save the gnocchi for another day.)
