Chicken Mulitas with Pineapple Salsa *Contains Coconut

Mulitas are crispy corn tortilla sandwiches the whole family will love. They're stuffed with Southwest spiced chicken, peppers, melted cheese, and topped with pineapple salsa & lime sour cream. #flavorfiesta

Ingredients (2 Servings)
  

  • 10 ozw chicken breast, raw, sliced
  • 1 each green bell pepper(s)
  • 2 each shallots
  • 2 tbsp Southwest seasoning
  • 6 ozw dairy-free cheese blend
  • 6 each corn tortillas
  • .5 cup pineapple salsa
  • .25 bunch cilantro
  • 1 each lime
  • 4 tbsp dairy-free sour cream
  • 2 each radishes

Instructions

  • Wash and dry all produce. Core, deseed and slice 1(2) green bell pepper(s) into ¼-inch slices. Peel and slice (2)4 shallots. Zest (1)2 lime(s) and cut into wedges. Thinly slice 2(4) radishes and chop the cilantro. Place the pineapple salsa in a small bowl.
  • Heat a medium sauté pan with a drizzle of oil over medium-high heat. Place the sliced chicken in a medium size bowl and add the Southwest seasoning with a good pinch of salt and pepper. Mix until all the chicken is seasoned. Add chicken to the pan and sauté for 4-6 minutes. Turn the heat down to medium-low and add the green bell peppers and shallots. Stir frequently until the vegetables are tender. Turn off the heat and set aside.
  • In a small bowl, mix the dairy-free sour cream, lime zest, the juice of half of the lime wedges and a pinch of salt. Stir and slowly add water a little at a time until the sour cream thins out enough to drizzle. Set aside for serving.
  • Heat a drizzle of oil in a medium sauté pan over medium heat. Place 1 corn tortilla in the hot oil and a good pinch of the dairy-free cheese bend on top of the tortilla. Spoon some of the chicken mixture on top of the cheese and finish with a pinch of dairy-free cheese blend on top. Place another tortilla over the mixture to create a sandwich. Cook for another 2 minutes or until the bottom tortilla is crispy and brown. Remove from the pan and set on a paper towel. Repeat for the remaining mulitas.
  • Cut the mulitas in half and place on a serving plate. Top with pineapple salsa and lime sour cream. Garnish with cilantro, radish slices and remaining lime wedges.

 Tips & Tricks
Mulitas are muy versatile!  Your little ones might just want chicken and cheese, but maybe you like the works. Use the toppings in any combination (even heat the salsa with the chicken, rebel.) Or add your favorite hot sauce.
