Ingredients (2 Servings)
  

  • 10 ozw Ground Turkey
  • 12 each Corn Tortillas
  • 1.5 cup Enchilada Veggie Mix
  • 1.5 cup Chef Greg's Enchilada Sauce
  • 1 med Yellow Onion
  • 4 tbsp Pico de Gallo
  • 2 floz Sour Cream
  • 1 tbsp Southwest Seasoning
  • 3 oz Blended Cheese

Instructions
 

(2 servings) 4 servings

  • Preheat oven to 400˚F. Transfer pico de gallo and sour cream into two serving dishes. Peel and then dice yellow onion into ½-inch pieces.
  • In a large non-stick sauté pan, heat a drizzle of oil over medium-high heat. Add (½) 1 diced yellow onion and sauté for about 2 minutes. Add ground turkey and continue to cook, breaking up the pieces of turkey as you go, for about 4-6 minutes or until turkey is starting to brown and is cooked through. Add (½C) 1C enchilada sauce and Southwest seasoning to turkey and mix together, remove from heat and transfer to mixing bowl. Add ½ the cheese blend, and the enchilada veggie mix and stir to incorporate.
  • On counter or clean cutting board layout (6) 12 corn tortillas. Fill each tortilla with about ¼C enchilada filling. Roll the tortillas around filling like a burrito but leave the ends open. Place enchiladas in a baking/casserole dish that has been lightly oiled. Cover the enchiladas with remaining enchilada sauce and then sprinkle remaining cheese blend over the top. Place in oven on top shelf and bake for about 15-20 minutes or until cheese has melted and enchiladas are hot.
  • Place Loaded Turkey Enchiladas on serving plates and garnish with pico de gallo and sour cream. Serve & enjoy!

Recipe Notes:

TIPS & TRICKS: Placing the corn tortillas in the microwave for a few seconds helps to soften them, making the rolling of the enchiladas a little easier...about 20 seconds should suffice.
