Ingredients (2 Servings)
  

  • 10 ozw Ground beef
  • 1 each Shallot
  • 1 ozw Rice cereal
  • 6 ozw Broccoli florets
  • 1 tsp Italian seasoning
  • 1/4 ozw Basil leaves
  • 1/2 lb. Brown rice spaghetti
  • 2 cloves Garlic cloves, minced
  • 1 each Lemon
  • 3 cups Chef Gil's pasta sauce

Instructions
 

  • Preheat oven to 400°F. Wash and dry all produce. Mince garlic cloves and small dice (½) 1 shallot. Chiffonade (thinly slice) basil. Place a large pot of salted water on stovetop over medium-high heat. In large sauté pan, heat a drizzle of oil over medium-high heat. Sauté shallot and garlic for 1 minute until translucent and remove from heat.
  • +In large mixing bowl, combine ground beef, sautéed garlic and shallot, Italian seasoning, (¼C) ½C *rice milk, rice cereal, and a pinch of salt and pepper. Mix thoroughly until well incorporated. Coat your hands and baking tray with a small amount of vegetable oil. Form beef mixture into 1-½ inch meatballs (serving of 2 yields 10-12, serving of 4 yields 20-24) and place onto baking tray. Place on the top rack of the oven and roast until browned and cooked through, 14-16 minutes.
  • Once pot of water is simmering, add brown rice spaghetti and cook until it is al dente, 8-10 minutes. Continue to step 4 while the pasta is cooking.
  • Bring (½C) 1C water with (1t) 2t salt to a simmer in a large pot with a lid. Add broccoli florets and increase heat and steam for about 3 minutes until it softens. Transfer broccoli to a baking tray and season with salt, pepper, and a zest from (½) 1 lemon. Roast in oven until broccoli is tender and slightly browned, 3-4 minutes.
  • Heat Chef Gil's pasta sauce in a medium to large pot over medium-high heat. Make sure the pot is big enough for both sauce and meatballs. Remove meatballs from oven and place into the warm sauce to simmer and finish. Drain the water from the cooked brown rice pasta and rinse with hot water. Drizzle with vegetable oil.
  • Place pasta into large serving bowl and top with meatballs and sauce. +Garnish with thinly sliced basil on top. Transfer broccoli into serving dish.
    Serve and enjoy!

Tips & Tricks:
+If your diet allows, add grated parmesan cheese to the meatball mixture and garnish for the completed meal.  Mangia!
*Any unflavored milk substitute will work for this recipe so please use what works best for your family.
