Ingredients (2 Servings)
  

  • 8 ozw Beef Top Round Steak
  • 1 each Romaine Heart(s)
  • 1 cup SW Pico Salad Mix
  • 8 ozv SW Dressing
  • 2 pkg Tortilla Strips
  • 1.5 tsp SW Seasoning
  • ¼ bunch Cilantro

Instructions
 

(2 servings) 4 servings

  • Preheat oven to 400˚F or pre-heat grill of choice. Place top Round Steak(s) in sealable bag with a drizzle of oil and the Southwest Seasoning. Leave steak out on counter (in bag) while you prepare other items. Cut the romaine heart into 1½ inch pieces. Wash and dry romaine. Pick cilantro leaves and wash/dry. Reserve for later step.
  • In a large non-stick sauté pan, heat a drizzle of oil over medium-high heat. Sear steak(s) on each side for about 2 minutes or until brown. Transfer to baking tray and finishing cooking in oven until internal temp reaches 130F (for medium), about 5-7 minutes. If you have a grill or grill plate you could grill the steak breasts as well. Let the steak rest for a minute or so before slicing.
  • In large mixing bowl, add romaine, as much Southwest dressing as you prefer, the SW Pico Salad Mix, and a pinch of salt & pepper. Toss to evenly coat Romaine.
  • Place Southwest Steak Salad into serving bowl and top with sliced steak, cilantro leaves and tortilla strips. Serve & enjoy!

TIPS & TRICKS: Use a grill plate that works on your gas or electric range to add an additional layer of flavor to the steak...this is how we prepared the steak in this photo!
