Ingredients (2 Servings)
  

  • 18 ozw Prepared polenta, 1 package
  • 3 each Radish
  • 2 ozw Red Cabbage, shredded
  • 2 each Limes
  • ¼ bunch Cilantro
  • 1 tsp Cumin
  • 1 pkg Pozole Stew

Instructions
 

  • Preheat oven to 400F.Wash and dry all produce. Slice prepared polenta into 1" slices and place on paper toweling. Slice radish into thin coins and then again length wise to matchstick like pieces. Pick then chop cilantro.
  • Zest and then juice 1/2 of the limes and place in mixing bowl. Slice remaining limes into wedges and set aside until meal is ready. Add cumin and your choice of *sour cream to the mixing bowl with the lime juice. Reserve for when meal is ready.
  • In a large nonstick sauté pan, heat a drizzle of vegetable oil over medium-high heat. Add the slices of polenta and cook on each side for about 4-5 minutes or until the polenta is golden brown. Transfer polenta to baking tray and place in oven, baking for additional 7-10 minutes or until the polenta is heated through.
  • In small-medium sized pot, empty contents of prepared Pozole stew and heat until it simmers over medium-low heat.
  • Place about a 6oz serving of heated Pozole Stew in a large bowl. Arrange a few slices of cooked polenta cakes and garnish with radish, cilantro, red cabbage, and lime wedges. Drizzle with cumin-sour cream.
