Parmesan-Ranch Chicken with Skillet Potatoes and Snap Peas * Contains Coconut

For all the Ranch lovers this Crispy Baked Parmesan Ranch Chicken is just for you! Prepared Using only a few ingredients, you can create a delicious chicken dinner in just over 30 minutes. Simple, moist and delicious and perfect for your weekly rotation....oh and it's drizzled with more Ranch!

Ingredients (2 Servings)
  

  • 12 oz Chicken Breast Boneless Skinless
  • .5 Cup Ranch Dresing
  • 12 oz Yukon Gold Potato
  • 1 each Small Onion
  • 1/4 Cup Bacon Pieces-Cooked
  • 1 oz Breading mixture
  • 2 tbsp Parmesan Shreds-Fine
  • 1 tbsp 5 Flav Spice
  • 4 each Chives
  • 6 oz Sugar Snap Peas

Instructions
 

  • Prep
    Preheat oven to 425 degrees. Place the chicken breast in a 1G plastic bag and half the Safer Plate ranch dressing. Combine well and marinate at room temperature until step 3. Wash and dry all produce. Diced Yukon Gold potatoes into 1-inch pieces. Peel and dice onion into half inch pieces. Thinly slice the chives.
  • Cook the Potato
    Place the diced potatoes into a medium pot and cover with water and a pinch of salt. Boil for 10-12 minutes or until it is easily pierced with a fork. Pour water and potatoes into a strainer, gently shake to make sure it is thoroughly drained.
  • Prepare the Chicken
    In a shallow baking dish, combine the breading mixture, dairy-free parmesan shreds, and half the 5 flav spice. Remove one chicken breast at a time and press into the breading mixture making sure to coat the entire chicken breast. Place on a baking tray. Repeat for remaining pieces of chicken then place in the oven. Bake chicken for15- 20 minutes or until the internal temperature is 165 degrees. Remove from the oven and set aside until ready to serve.
  • Finish Potatoes
    While the chicken is cooking, heat a sauté pan and a good drizzle of oil on high heat. Add the potatoes and a good pinch of salt & pepper. Sauté for 2-3 minutes stirring occasionally browning the potatoes. Add the onion, bacon, and remaining 5 flav spice. Sauté for another 2-3 minutes or until the onions are tender. Season to taste with salt and pepper. Set aside until ready to serve.
  • Snap Peas
    Using the remaining sauté pan add a 1/4C (1/2)C of water along with the snap peas. Cover and bring to a boil for 2 minutes. Drain the water from the pan and add 1T(2T) of your favorite butter and place back on the heat. Melt the butter and season with a pinch of salt & pepper. Set aside until ready to serve.
  • Serve and Enjoy!
    Divide the potatoes, snap peas and place the chicken on top of the potatoes. You can either drizzle the remaining ranch dressing over the chicken or serve as a dipping sauce. Garnish chicken with the chive. Serve and enjoy!

Tips & Tricks
Steaming vegetables in a small pan, a cover, and a little water is a quick and easy way to get the job done.  Drain the water and you have a hot pan to finish the job!
