Oven Fried Chicken with JoJo Potatoes *Contains Coconut

This is a healthier twist on "fried chicken" with a baked cornflake crust (that kids LOVE!) We did some of the prep work so you can get this meal ready and on the table in a school-night-snap.

Ingredients (2 Servings)
  

  • 2 each chicken breast, 5-6ozw, raw
  • ¾ cup Chef Gil's "buttermilk" marinade
  • 2 cups breading mixture
  • 1 each russet potatoes
  • 1 pkg glazed baby carrots,
  • ½ cup Safer Plate Ranch, (*Contains Coconut)
  • ½ tbsp 5 Flav Spice

Instructions

  • Preheat oven to 425°F. Slice each chicken breast into 3 strips lengthwise. Pour Chef Gil’s “buttermilk” marinade into a large 1G sealable bag and add chicken breast slices. Let chicken marinate in mixture for at least 15 minutes and up to 24 hours. If marinating longer than an hour, place chicken in the refrigerator.
  • Wash and dry potatoes and cut lengthwise into ⅛" wedges. Toss potato wedges with 5 Flav Spice and a drizzle of oil in a 1G sealable bag. Toss until well coated with spice and transfer to a baking sheet. Place sheet on the top rack of oven and bake for 20-25 minutes until tender and golden brown.
  • While the potatoes are roasting, pour breading mixture into a shallow dish. Remove marinated chicken allowing excess liquid to drain off. Then place marinated chicken in breading mixture one slice at a time, rolling chicken around until evenly coated. Place coated chicken breasts onto an oiled baking sheet. Bake in preheated oven until golden brown and internal temperature is 165°F, about 12-15 minutes.
  • There are two options for cooking glazed carrots.
    1. Pour glazed carrots into medium-sized sauté pan. Heat over medium-low heat until carrots are hot, and glaze has reduced, about 6-8 min.
    OR
    2. Roast glazed carrots in a glass baking dish in the oven for 8-10 minutes.
  • Plate chicken tenders and glazed carrots with a side of Safer Plate Ranch and the JoJo potatoes.

Recipe Notes:

Tips & Tricks:
The lemon juice in this marinade helps tenderize the chicken and gives it a faux “buttermilk” flavor. (The longer it marinates, the better the yum-factor.) Reduce prep time by letting it marinate in the fridge the day before.
