Mediterranean Chicken Pita Plate *Contains Coconut
Tandoori-spiced chicken breast with roasted red pepper hummus, pitas, and a refreshing tzatziki salad. When’s the last time your dinner table featured a Mediterranean marvel like that? (Rhetorical question.)

Ingredients (2 Servings)
- 12 ozw chicken breast
- 4 ozv roasted red pepper hummus
- 1 each Persian cucumber(s)
- 1 each shallot(s)
- 1 cup quinoa
- 2 tbsp sun-dried tomatoes
- 1 tbsp tandoori spice
- 2 each pita bread
- 4 ozv tzatziki dressing *Contains Coconut
- 3 ozw cherry tomatoes
- 1 pkg chicken stock concentrate
Instructions

- Preheat oven to 400˚F. Place chicken into a sealable bag and add tandoori spice. Mix to cover chicken with seasoning and leave out at room temperature until step 3. Wash and dry all produce. Cut Persian cucumber(s) into ¼-inch pieces and cherry tomatoes into quarters and place together in a mixing bowl. Peel and thinly slice shallot(s) and add to cucumbers and tomatoes. Add tzatziki dressing to the bowl with a pinch of salt & pepper and mix to combine. Reserve for later
- In a small pot add quinoa, sun-dried tomatoes,(1pkg) 2pkgs chicken stock concentrate, (1½C)3C water, and a pinch of salt & pepper. Bring to a simmer, cover with a lid and cook for about 4-6 minutes or until the stock has been absorbed and the quinoa starts to open up. Fluff with a fork and reserve until later.
- Meanwhile, heat a drizzle of oil in a large sauté pan over medium-high heat. Sear each chicken breast for about 1-2 minutes per side. Place on baking tray and finish in the oven for an additional 6-10 minutes or until it reaches 165˚F. During the final few minutes of cooking the chicken, place the pita bread in the oven so that it gets nice and toasty.
- Assemble each plate with a hefty portion of roasted red pepper hummus, a bit of quinoa, the tandoori chicken and a few pieces of pita. Top the chicken with the tzatziki salad. Serve & enjoy!
