Ingredients (2 Servings)
  

  • 2 each pork chops, 6 ozw
  • 1.5 cup brown rice, cooked
  • 1 each red bell pepper
  • 1 each yellow onion, medium
  • 12 each pineapple cubes, 1.5"
  • 3 ozw Spam, reduced sodium
  • 3 ozw peas & carrots
  • 4 ozv sweet chili sauce
  • 4 ozv Maui sauce

Instructions

  • Preheat oven to 400°F or fire up the grill if you have one! Soak skewers in water. Cut each pork chop into six 1½ inch pieces. Place in a 1G sealable bag along with ½ of the Maui sauce. Leave to marinate at room temperature while you finish the rest of the prep. Wash, dry and cut each red bell pepper(s) into twelve 1½ inch pieces. Peel and cut each yellow onion(s) into twelve 1½ inch pieces.
  • Remove skewers from water and assemble the kabobs however your family prefers. There is enough to put 3 pieces each of pork, pineapple, onion, and red bell pepper per skewer.
  • Grill each kabob over medium-high heat on a well-oiled grill or +grill plate. Rotate the kabobs every 2-3 minutes to get a consistent char on all sides. Once the kabobs have been grilled on all sides, brush each one with the remaining Maui sauce and either continue to cook on the grill (away from direct flames) or transfer to a baking sheet and finish in the oven. They will need about 4-6 minutes to finish cooking.
  • Meanwhile, heat sauté pan over medium-high heat. Add a drizzle of oil, diced Spam, and the peas & carrots. Sauté for about 2 minutes and then add the brown rice and a pinch of salt & pepper. Keep cooking, stirring occasionally for an additional 4-5 minutes or until the rice is hot.
  • Spoon the Spam fried rice on plates and top with Luau Kabobs. Spoon the sweet chili sauce over kabobs or offer as a dipping sauce.

Tips and Tricks:
+If you don't own a cast iron skillet or grill plate for your stovetop, we suggest you invest! (Most are made for gas ranges but there are electric range versions too.) It's a great way to get that grilled flavor sans grill!
