Ingredients (2 Servings)
  

  • 10 ozw Ground Beef
  • ½ cup Chef Greg's Enchilada Sauce
  • ½ med Yellow Onion
  • 5 ozw Frito's Corn Chips
  • 1 can Pinto Beans
  • 2 ozw Diaya Chedder Shreds
  • 1 tbsp Southwest Seasoning

Instructions
 

(2 servings) 4 servings

  • Preheat oven to 400˚F. Peel and then dice (½) 1 yellow onion into ½-inch pieces.
  • In a large non-stick sauté pan, heat a drizzle of oil over medium-high heat. Add diced yellow onion and sauté for about 2 minutes. Add ground beef and continue to cook, breaking up the pieces of beef as you go, for about 4-6 minutes or until beef is starting to brown and is cooked through. Add enchilada sauce, drained pinto beans, and Southwest seasoning to beef and mix together. Continue to cook until simmering.
  • Place about ⅔ Frito's corn chips in a baking/casserole dish that has been lightly oiled. Cover the corn chips with a layer of hot beef mixture. Sprinkle ½ of the Chedder Shreds over beef mixture. Add remaining corn chips and then top with remaining Chedder Shreds. Place in oven on top shelf and bake for about 15-20 minutes or until cheese has melted and Frito Pie is hot.
  • Place Beef Frito Pie on serving plates.
    Serve & enjoy!

Recipe Notes:

TIPS & TRICKS: Frito Pie can be a great "Walking Taco" option.  Simply place the Frito Corn Chips in a paper bowl and cover with hot filling and cool toppings.  Could also use individual bags of your favorite corn chips as well!
