Bibimbap is a popular Korean dish made up of a bowl of rice, sautéed and seasoned vegetables, hot pepper paste, and a bit of seasoned protein. “Bibim” translates as “mixed” and “bap” translates as “cooked rice”–so “bibimbap” literally means “mixed rice.”

Ingredients (2 Servings)
  

  • 1 can Chickpeas, 15.5 oz
  • 5 ozw Napa Cabbage, shredded
  • 1 each Carrot
  • 3 each Green Onion, sliced, separate whites and greens
  • 4 ozw Shiitake Mushrooms, sliced
  • 2 cloves Garlic
  • 1/2 tbsp Ginger, thumb sized
  • 2 pkg White Vinegar
  • ¾ cup Jasmine Rice
  • 1/2 cup Bibimbap Sauce

Instructions
 

  • Wash and dry all produce. Drain chickpeas, reserve for later. Trim and thinly slice the green onion, separating the whites from the greens. Trim and peel carrots. Using a peeler, shave carrot into ribbons, *rotating as you go. Remove stems and thinly slice shiitake mushrooms. Peel and mince garlic cloves and ginger.
  • In a small bowl, combine the whites from separated green onion with white vinegar and a pinch of salt. Allow to marinate until meal is ready. Save the green part of the green onion for a later step.
  • Bring 3C water to a boil in a medium pot. Stir in jasmine rice and 2t salt. Cover and reduce heat to low. Simmer for 10-12 minutes until all the water is absorbed. Remove from heat and keep covered until ready to enjoy the meal.
  • Heat a drizzle of oil in large sauté pan over medium-high heat. Add carrot ribbons and cook for 3-4 minutes until slightly softened. Season with salt & pepper. Remove and set aside carrots for later. Repeat this process with the Napa cabbage and the shiitake mushrooms, removing all vegetables from the pan after softened. Keep vegetables warm if possible. If you need to reheat them when it is time to serve, warm them quickly in the microwave or in sauté pan for a few moments.
  • Heat another drizzle of oil in the same pan over medium-high heat. Add chickpeas, the green part of the green onion, ginger, garlic cloves and sauté for 1-2 minutes. Add bibimbap sauce and cook, stirring, until the liquid has been absorbed, approximately 3-4 minutes. Season to taste with a pinch of salt & pepper.
  • Fluff jasmine rice with a fork and divide between serving bowls. Arrange chickpeas and veggies over rice. Top with pickled white onions. Serve & enjoy!

Recipe Notes:

*Carrot ribbons add a touch of fun to any dish. Use a vegetable peeler and rotate the carrot as you apply firm pressure to the peeler. This is what causes the carrot to peel in ribbons, instead of breaking off in short strips as it does when not rotated.
