Cheddar-Crusted Chicken *Contains Coconut
Crispy oven baked cheddar breaded chicken breast with Sweet potato mashers and Roasted broccoli

Ingredients (2 Servings)
- 2 each Sweet potato
- 1/4 cup Breading Mixture
- 1/2 cup Cheddar Shreds
- 1 tbsp 5 Flav Spice
- 12 oz Chicken Breast, Boneless Skinless
- 4 tbsp Sour Cream, Dairy Free
- 6 oz Broccoli Florrettes
Instructions
- PrepAdjust Rack to top and middle positions and preheat oven to 425 degrees. Wash and dry all produce. Peel and dice sweet potatoes into 1/2 inch pieces.
- Cook Sweet PotatoesPlace sweet potatoes in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until tender, about 15 minutes. Drain and return to pot. Keep covered until ready to mash.
- Cook ChickenMeanwhile, in a small bowl, combine breading mixture, cheddar shreds, and half the 5 flav spice, a drizzle of olive oil, a pinch of salt and pepper. Pat the chicken dry with paper towels and season all over with salt, pepper, and the remaining 5 flav spice. Transfer chicken to a baking tray; generously brush each chicken breast with half the sour cream (you'll use the rest later) and evenly top with the breading mixture, pressing to adhere. Place on the middle rack in the oven and cook for 15-20 minutes or until the internal temperature is 165 degrees.
- Roast BroccoliToss the broccoli on the second baking tray with a drizzle of olive oil, salt, and pepper. Place in oven and roast until the broccoli is browned and tender. 12-15 minutes.
- Mash Sweet PotatoesWith the potato masher (or electric mixer), mash the sweet potatoes with 2T(4T) of your favorite butter, remaining sour cream, and a large pinch of salt. Keep covered until ready to serve.
- Serve and Enjoy!Divide the sweet potatoes, broccoli and chicken between plates. Serve and enjoy!

Tips & Tricks
If you like your sweet potatoes a little sweeter, feel free to add a couple tablespoons of brown sugar, maple syrup, or honey to make them just right for you and your family.
