Ingredients (2 Servings)
  

  • 10 ozw Beef, raw, sliced
  • 2 cloves Garlic Cloves, minced
  • 4 ozw Mushrooms, assorted
  • 1 each Shallot
  • 4 each Chives
  • 1/2 lb Brown Rice Spaghetti
  • 1 tbsp Cornstarch
  • 2 packages Beef Stock
  • 1/4 cup Dairy-Free Sour Cream

Instructions
 

  • Mince garlic cloves and chives. Set minced chives aside to use as a garnish when plating this dish. Dice shallot(s) into small pieces. Slice mushrooms into 1/4" slices and beef top sirloin into thin strips.
  • In a large saute pan, over medium-high heat add 1-1/2T | 3T oil. Once oil is hot, add sliced beef top sirloin and cook for 2-3 minutes per side. Add diced shallot and cook for 1-2 minutes or until onions start to soften. Remove beef and shallot from pan and save for step 3. In the same saute pan, add the sliced mushrooms and minced garlic cloves and cook until mushrooms start to brown, an additional 3-4 minutes.
  • Add the cornstarch to the pan and stir until it is absorbed. Combine 2 | 3 beef stock packages with 1C | 2C water (note: this is less water than directed on packet). Add prepared beef stock, rice milk, 1t | 2t salt and 1/2t | 1t pepper. Stir, scraping the bottom of the pan. Add cooked beef, onions, and dairy-free sour cream and mix until it is smooth and creamy. Allow the sauce to simmer for about 3-5 minutes.
  • In a medium/large pot, fill 2/3 full of water and bring to a simmer. Add IT | 2T oil and the brown rice pasta Cook until the pasta is al dente, about 7-8 min, and then drain. Add pasta to simmering stroganoff sauce and continue to cook for an additional 1-2 minutes.
  • Plate stroganoff and pasta mixture and garnish the top with minced chives. Serve & Enjoy!

Recipe Notes:

If your diet allows for dairy, use real sour cream instead of vegan sour cream in this dish.
