Beef Bourguignon with Garlic Mashed Potatoes & Roasted Carrots. *Contains Red Wine

- *Any unflavored milk substitute will work for this recipe so please use what works best for your family.
Ingredients (2 Servings)
- 3 cup Beef bourguignon
- 1½ pound russet potatoes
- 1 each carrot(s), ¼-inch slices
- 3 clove garlic
Instructions

- Preheat oven to 400˚F. Wash, dry and peel carrot(s). Trim the ends and slice into ¼ inch pieces. Peel potatoes and then cut into 1½ inch pieces. Place potatoes in medium sized pot and add enough water to cover potatoes by 2 inches. Peel and mince garlic, then add to pot with potatoes. Pour beef bourguignon into a separate medium-sized pot and warm over medium-low heat.
- Toss sliced carrots with a drizzle of oil and a pinch of salt & pepper and place on baking tray. Roast in oven for 18-20 minutes or until tender and starting to brown. Bring potatoes and garlic to a boil and cook until potatoes are very tender, 15-20 minutes.
- †Once the potatoes are tender, drain them thoroughly using a strainer. Return them to the pot and mash with a whisk. Add (1/4C) 1/2C rice milk, (2T) 4T margarine and a pinch of salt & pepper, mix to combine.
- Divide mashed potatoes between plates or bowls and top with beef bourguignon and a side of the roasted carrots.Serve & enjoy!

TIPS & TRICKS:
†If you have a mixer, whip those mashed potatoes! Start with boiled and drained potatoes and mix until smooth, slowly add the margarine and milk of your choice (and if your diet allows, throw in some sour cream.)
