BBQ Pork Chop

This is a simple and easy way to have delicious BBQ even when the weather has put a damper on your outdoor grilling plans. The Jo Jo potatoes are always a hit with the kids and can be fun when you experiment with different dipping sauces of your own.

Ingredients (2 Servings)
  

  • 2 each Pork Chop, 5 ozw
  • 1 1/2 each Russet Potato, wedges
  • 6 ozw Safer Plate Summer Vegetables, green beans, carrot, broccoli, zucchini
  • 4 ozv BBQ Sauce, prepared
  • 2 tbsp Steak Seasoning

Instructions
 

  • Preheat oven to 400F. Wash and dry all produce. Cut each russet potato length wise into 8 wedges.
  • Toss the russet potatoes on a baking sheet with a drizzle of oil, and a pinch of salt & pepper. Roast in the oven for 20-25 minutes until tender.
  • Using the small pot, heat the BBQ sauce on medium heat until it simmers. Turn off the heat and set aside.
  • Pat dry the pork chops and season with steak seasoning, salt& pepper. Heat a drizzle of oil in a sauté pan over medium heat. When the oil is hot, add the porkchops to the pan and cook until browned on both sides and cooked through, or internal temperature is 145 degrees. This will take about4-6 minutes each side.
  • Remove the potatoes from the oven and make some room by sliding the potatoes to one side of the tray (If you do not have room use a separate baking tray). Transfer the pork chops to the baking tray to *glaze. Spoon BBQ sauce over the top of the pork chops evenly and return to the oven for 3 minutes to bake the sauce onto the porkchop. Remove pork chops and set aside.
  • While the pork is cooking, heat sauté pan over medium-high heat. Place the Safer Plate vegetable blend in the pan with a splash of water. Cover and steam vegetables for 3 minutes. Remove the lid and add 2 tablespoons of margarine and season with salt & pepper.
  • Serve the pork chops with the vegetables and Jo Jo potatoes. Try dipping the potatoes into some Sriracha sour cream or sweet chili sauce. Serve and Enjoy!
