Spicy Italian Sausage Penne

Ingredients (2 Servings)
  

  • 10 ozw Italian Sausage, ground
  • 1 1/4 ozw Spinach
  • 1 each Shallot
  • 1/4 ozw Basil
  • 1 each Red Bell Pepper, baby
  • 3/4 ozw Kale, baby
  • 1 clove Garlic
  • 1/2 lb. Brown Rice Pasta
  • 1 pkg Chicken Stock, concentrate
  • 1 can Diced Tomatoes

Instructions
 

  • In a large saute pan or sauce pot, heat 1T | 2T oil over medium-high heat. Add ground Italian sausage and cook, breaking it apart into small pieces, until browned.
  • Dice onion and slice red pepper and add to the pan with the cooked sausage. Cook for about 2-3 minutes until vegetables start to soften. Add minced garlic, diced tomato (with juice) and prepared chicken stock (see package).
  • Bring large pot full of water to a boil. Add 1t salt and rice pasta and cook until al dente, about 8 minutes. While pasta is cooking, finish pasta sauce.
  • Bring sauce to a simmer and add kale and spinach and cook until they are wilted.
  • Drain pasta. Try to cook and drain pasta as close to when you are ready to serve as possible as the rice pasta starts to break down if it sits too long.
  • Add cooked pasta and adjust seasoning with salt and pepper. *Chiffonade basil and garnish the dish. Serve & Enjoy!

Recipe Notes:

Chiffonade is a slicing technique in which leafy green vegetables or flat-leaved herbs such as spinach, Swiss chard, or basil, are cut into long, thin strips. Stacking leaves and rolling them tightly before slicing the leaves perpendicular to the roll helps keep the color of the leaf.
