Lemon Caper Chicken with Garlic Mashed Potatoes & Broccolini *Contains wine

This pan-fried chicken is topped with creamy lemon, white wine and caper sauce. It’s served with garlic mashed potatoes and broccolini for a balanced meal that’s so quick and easy they’ll call you the weeknight wizard.

Ingredients (2 Servings)
  

  • 10 oz chicken breast
  • 4 T rice flour
  • 3 each garlic, cloves
  • 6 oz broccolini
  • 6 ozv lemon-caper sauce
  • 1.5 lbs Yukon Gold potatoes
  • .25 oz parsley

Instructions
 

  • Wash and dry all produce. Chop the parsley and set aside. Peel potatoes and then cut into 1½ inch pieces. Place potatoes in medium-sized pot and add enough water to cover potatoes by 2 inches. Peel and mince garlic; add to the potatoes. Bring potatoes and garlic to a boil and cook until potatoes are very tender, 15-20 minutes.
  • While the potatoes boil, place the lemon-caper sauce in a small pot over medium heat and bring to a simmer. Turn off the heat and stir in (1T) 2T of margarine and set aside
  • Remove chicken from the package and pat dry with a paper towel. Place the chicken breast on a flat surface and cover with plastic wrap. Using a meat mallet, pound the chicken breast until ¼" thick. Remove the plastic wrap and place chicken on a plate and season with a pinch of salt & pepper.
  • Place a medium-sized sauté pan on the stove over medium-high heat with a good drizzle of oil. Put the rice flour in a shallow dish. Dredge the chicken in the rice flour until it is covered on both sides. Using tongs, carefully place the chicken in the hot oil and sauté for 2-3 minutes on both sides.
  • Using a medium pot with a lid, add the broccolini and (1/2C) 1C of water and bring to a boil. Cook for approximately 2-3 minutes or until the broccolini is bright green and tender. Drain the water and add (1T) 2T margarine and season with salt & pepper.
  • Once the potatoes are tender, drain them thoroughly using the strainer. Return them to the pot and mix with a whisk. Add (¼C) ½C rice milk, (2T) 4T margarine and a pinch of salt & pepper, mix to combine.
  • Divide the mashed potatoes between plates. †Place chicken breasts on each plate with a spoonful of lemon-caper sauce over the top and serve with broccolini. Garnish the chicken with the chopped parsley.

TIPS & TRICKS:
†You can serve the sauce on the side OR add the cooked chicken to the prepared sauce for a minute or two to create a glaze. (Chef Gil likes the latter – just sayin’.)
