Wash and dry all produce. +Thinly slice shallots(s). Peel and thinly slice carrot(s). Dice red and yellow peppers into 1” pieces. Cut zucchini in half lengthwise and cut halves into 1" pieces. Cut the cherry tomatoes in half. Chiffonade (or thinly slice) basil. Place a pot of salted water on the stove on medium-high heat for pasta.
In a large sauté pan, heat a large drizzle of oil over medium-high heat. Add sliced chicken breast and sear on all sides until browned (about 2-3 minutes). Transfer to a plate.
Add brown rice penne to the boiling water and cook until Al dente (cooked but not soft), about 8 minutes. While pasta is cooking, move on to the next step.
Wipe out the sauté pan and add another drizzle of oil and heat over medium-high heat. Add the shallots, zucchini, red pepper, yellow pepper, carrots, and cherry tomatoes with a pinch of salt & pepper. Sauté for about 3-4minutes, until the vegetables become tender. Add the cooked chicken breast to the vegetables and mix with a spoon. Add the basil alfredosauce and bring to a simmer.
When the brown rice penne is Al dente, drain in a strainer and then place in a large bowl. Add the alfredo chicken and vegetable mixture to the pasta bowl and mix with a spoon until it is coated with the sauce.
Serve on individual plates or in the large bowl if you want to serve it family style. Garnish with basil and dairy-free Parmesan. Serve & enjoy!
